they probably won't be able to log anything in incognito mode but i suppose if there was a local proxy thing then it could still log traffic. check pref > network > advanced > settings > NO PROXY

if you're trying to avoid leaving traces on your computer, it's good enough. if you're worried about tracking, not so much. you can be sure that google has a dedicated team for breaking incognito mode on other browsers, and in their own, well, lol.
