flap meat comes from the bottom sirloin of a cow, specifically from the obliques.

Mash garlic jalepenos and cilantro with a mortar/pestle. Lay out that meat. Salt and pepper. Smear that mash on it. Roll it up. Put in a Ziploc bag with juice of three limes and one orange. Marinate two three hours. Grill that meat. Make tacos and stuff.
