american is pretty good because it melts very well and doesn't have a lot of flavor. there's all kinds of crazy poo poo going on in a burger so bringing a really strongly flavored cheese like aged gouda to the party can gently caress things up and overshadow the beef flavor of the meat. my honest answer is blue cheese compound butter
