Maybe some generic mammal behaviors got locked in before they decided to focus on ants? They look weird as hell, but the've got a common ancestor with kittens and humans and giraffes if you go back far enough.

Yes, and we actually did semi-domesticate cheetahs, ancient peoples used them as hunting cats for centuries.

They're nervous, high-strung, and don't breed well in captivity. They're also all really inbred, sadly, which is probably the biggest threat to them.

So are many feral cats. The famous Grandpa Mason was super nervous around humans, but loved kittens. A friend who took in hard to adopt cats had one that hid all day, it would only come out and do cat stuff when the humans were sleeping or out. And those are ferals who are only a few generations out of domestication, after thousands of generations that selected for tolerance of humans as a pro-survival trait.

We probably didn't deliberately choose to domesticate housecats either. They just showed up and said "I live here now," as cats are wont to do. :3: The ones with higher tolerance of humans got to live in barns and nice warm houses, where their kittens had a little more protection from predators. And from there get traded on caravans and travel on ships all over the world.

It's also much easier to feed a house cat or farm cat than a cheetah. Let them go outside and they'll mostly feed themselves most of the time. You can't really do that with a cheetah, because it's big enough to take livestock. So only people rich enough in meat to feed a 80 pound obligate carnivore can afford to have pet cheetahs. They can be trained as hunting partners, but that still means you need to have a successful hunt every few days all year round. Dogs can also be trained as hunting partners but like us they are omnivores who will eat whatever. Dogs are super easy to feed so they are cheaper hunting partners to keep.

That's not genetic or losing domestication, though - any kittens they have in human care will be just as domesticated as a regular cat. It's just housecats in general still aren't automatically adapted to humans without growing up used to them or a long adaption process.
