If I had to guess in the 'worst rider ever' video that guy would probably smoke 98% of the people here on a dirtbike. He's clearly got some/a bit of experience on the dirt. He's pushing the bike below him and sitting mostly upright, probably influenced by the upright riding position of the bike. He looks pretty relaxed on the bike and while his lines aren't tight he's not weaving all over the track.

I'm able to just snap the throttle open in first and wait until I hit the redline and the front comes back down but the thought of using the clutch still frightens me. I've tried it a couple of times in second gear and I just lose the stomach for it, plus I'm afraid of damaging the bike.

Yeah it's more that as you lift the front, the amount of throttle needed to maintain the wheelie is less the higher you go. So if you don't roll out as you approach balance point, you're gonna loop that poo poo. As you slide backwards on the seat, you tend to open the throttle, and over the falls you go.
