Is it possible to put all your music on an iPod, delete all of it from your computer, then stream it on to the computer off of the iPod (without copying)? Using the standard software or otherwise?

Are you sure? Do you know if that's true for all models? Someone in the Zune thread said that the Zune can't do this and it's a complete dealbreaker. It would be a huge plus for iPod+iTunes.

I'm not worried about data loss; I can burn DVD backups or something. I really just want all the music in one simple place and to have that place not be my hard drive.
