I'm using a Firefox add-on to pull the .flv, AviDemux to convert to .avi, and Aatrek's .gif making guide thread covers the rest. As someone else mentioned, it should be relatively easy to do these within minutes of a play if you have a video capture card too. Edit: It takes maybe 15-20 minutes to do one right now, but that's largely because I'm still trying to find ways to bring file size down without too much loss in quality.
