Small tip for those trying to hunt a specific animal, when you find one, kill it and run far away enough to not see the corpse. Come back to the area around the corpse and there should be a freshly spawned critter for your murdering pleasure. This prevented me from quitting the game when I began to experience a glitch that made every beaver I killed BLOW UP AND DISAPPEAR. Happy hunting, cowboys.

I know it successfully worked for raccoons and beavers, but I would love for others to test it out and either prove me wrong or right. I know how games tend to spawn characters, and this appears that this is the way that Rockstar makes the animals reappear.
