Sephiroth did lots of squats in SOLDIER college and got really buff, and Cloud didn't, so Sephiroth could use that sword and Cloud tried but he probably fell on his rear end and almost amputated his hand off.

EDIT: vvvvv There's no way out of it once you're in, no indication for what buttons you've pressed and the only reference you have for the moves doesn't appear in battle...if I remember right.
