I would probably increase the flour in the crust recipe as I found mine to be a little too thin and also I would increase the entire crust recipe by 50% to fully cover the pie (as you can see, I ran outta crust a little on the top).

I like it quiet in here

I did Alton Brown's "Who loves ya baby back" recipe, for the millionth time. Fantastic as always, although I always grill them as opposed to braise.

I did a steak. Cast Iron pan, nuclear heat level, etc. I usually go for a more medium rare, but it was a great medium.

Made a mushroom, onion, wine sauce to go with it too that was good.

Did some basic baking/cooking for breakfast the last few days.

First up is blueberry swirl muffins from the Cooks Illustrated Cookbook -


Next up is some multi grain pancakes for healthy and tasty breakfast -



Both turned out really nice, especially the pancakes which still are nice and fluffy even though they are multigrain. Blending some of the multi grain into flour in a food processor really helped the texture

Baked meatballs (pork, veal, beef mix), marinara sauce, baked sweet potato because carbs, carbs, carbs. Sauce started as that butter+onion sauce that's all the rage. I find it boring. Instead of leaving it boring I brown a poo poo-ton of garlic and infuse some oil with fresh herbs before adding the boring sauce. Now it's an awesome sauce.

Tried making a super high hydration dough (90%), with pockets of meunster, topped with shredded cheddar and a few needles of rosemary. Was pretty good, will let proof a bit more next time so the crumb is bigger.

Well, those could be the most attractive buns I have ever seen. That did not come out right

I assume those are sesame seeds on the top bun, I am guessing you put them on in the bake and if so, how do they not brown like the rest of the bread.

Yeah just sprinkle em on before you bake the buns. They baked at 400F for 15 minutes if I recall correctly, I guess it wasn't enough to brown the seeds but was enough to brown the buns. I prefer a seedless bun, husband likes sesame seeds, so it was nice for each of us to get our preference.

I need some opinions on bread, cause I've never actually eaten a real version of this bread, so I'm kind of tasting it blind.

We made cuban bread, which is apparently kind of like an italian bread made with lard.



I actually had a lot of trouble finding a good recipe to work off of, maybe because I live in Michigan. I ended up putting about 3 recipes together, using the parts I liked from each of them, for instance only one used weight and baker's percentages but had no written method for how to actually make the bread etc.

We proofed and baked these as traditionally as we could, with soaked string on the top (traditionally a palm leaf is used to make the split in the top as opposed to scoring).

I believe they are supposed to turn out light, the color they are in our pictures, but I was surprised at how one dimensional the flavor of the bread was, even though we used a 24 hour preferment. It kind of tastes like a generic hoagie roll and has a very tight crumb. I haven't read anything that says we did anything wrong, but if anyone has some good experience with cuban bread I'd love some input.

They certainly weren't bad, just not particularly interesting.

Fried bananas with coconut milk for dipping.

Big bowl is full of bananas fried with a batter of panko, the small bowl is just flour dusted left overs, and the third is coconut milk simmered down with sugar and cardamon.
