Ingredients
2 cups flour
1 tablespoon baking powder
1/2 teaspoon baking soda
1 teaspoon salt
2 tablespoons white sugar (optional)
1/4 cup chilled butter, cut into pieces
1 cup buttermilk
Maple syrup for glazing

Method
-Preheat oven to 450 degrees.
-Mix the dry ingredients, then cut the butter pieces into it with a pastry cutter or two knives.
-Add the buttermilk, stirring just until a sticky dough forms.
-Turn it out onto floured surface, pat it into a square, and fold it in on itself a couple of times, like a letter.
-Pat it out again to about 1/2 to 1 inch thickness, depending on how you like them. Use a biscuit cutter to cut the biscuits out.
-Arrange them on a baking sheet, as close to each other as possible without touching. Make a small indentation in the center of each biscuit with your thumb (I've heard this helps them rise straight, but I've never not done it, so I have no idea.)
-Use a pastry brush to glaze each biscuit with the maple syrup, then pop them in the oven. The bake time will vary depending on how big you made them, so just keep an eye on them: they're done when the tops are golden brown, usually between 12-18 minutes depending on size.

The glazing and the sugar are optional, I just prefer a slightly sweet biscuit.

I spent most of my weekend cooking.



Tabbouleh - I made it with couscous instead of bulgur wheat, and it turned out to be pretty tasty.



Tzatziki



Roasted tomatoes, sauteed mushrooms and marinated artichoke hearts tossed in olive oil and lemon.



Swedish meatballs



Pork tenderloin - the sauce was a mix of hoisin, orange zest, lime zest and juice, and lemon juice. Despite the fact that I screwed the recipe up a bit, it was still delicious, especially with a bit of tzatziki.

If I could make a couple of suggestions: if you're going to use a gel next time, don't cut it in half, and use a bit less, so that it looks a bit neater on the plate. Maybe instead of putting foam on top, try putting it underneath the potatoes? Although I think your best bet might be to just eliminate them from the dish altogether, and try playing with other foods to complement the other items.

Also, no one is saying that the dish wasn't edible (quite the contrary, if you re-read mediaphage's comment). What we're saying is that the presentation was less than appealing.

Yeah, absolutely!

Tzatziki

16 ounces plain greek yogurt
1 medium cucumber, peeled, seeded, and finely chopped
Pinch salt
4 cloves garlic, finely minced
1 tablespoon olive oil
2 teaspoons red wine vinegar
5 to 6 mint leaves, finely minced

Place the yogurt in a cheesecloth lined mesh strainer. Let strain four hours at least.

Place the chopped cucumber in a cheesecloth and squeeze to remove the liquid; discard liquid. Combine the drained yogurt, cucumber, salt, garlic, olive oil, vinegar, and mint. It stays good in the fridge for about a week.

The tabbouleh is kind of a family recipe, so I never had exact measurements regarding the couscous -- I usually had some left over after making the tabbouleh. You can make your own couscous or buy it and prepare it accordingly.

Tabbouleh

2 cups diced roma tomatoes
1 medium cucumber, peeled, seeded, and diced
3/4 cup freshly chopped parsley leaves
1/2 cup freshly chopped mint leaves
1/4 cup chopped green onions
Pinch of salt and black pepper
4 tablespoons olive oil
1/4 cup fresh squeezed lemon juice
At least a cup of prepared couscous

Mix the tomatoes, cucumber, parsley, mint, green onions, salt and pepper in a bowl. Add couscous until you are satisfied with the ratio (should still be more vegetables than couscous in the end). Add the olive oil and lemon juices, toss with fork to blend.

Swiss chard soup with homemade pita chips and a bit dollop of greek yoghurt stirred in it. I added some crumbled hot italian sausage and a bit of sriracha to give it a big of heat. It was absolutely delicious.



Turkey burger with homemade tzatziki, because I am addicted to it. I mixed a little olive oil left over from tomato confit that I made into the ground turkey before cooking it, and it added a nice flavour. Tzatziki on turkey is as delicious as I knew it would be.

It's been a slow week in the kitchen.


Reuben with homemade sauerkraut - on marble rye, which is the best rye if you don't have time to bake the bread yourself


By far the laziest pizza I have ever made, but still pretty delicious. I had leftover flatbread so I threw on some fresh tomato sauce and sliced bell peppers, portobello mushrooms and sweet onion.


And my halloween breakfast baking project: mini-muffins. Chocolate chip (pink), fresh blueberry (blue), and banana-walnut (yellow).

Shawarma! I made this for ICSA, but I'll be honest, I was too distracted by Skyrim to make a decent entry.

I made my own pickles, flatbread, tzatziki and tahini. The boyfriend is coming over for dinner tomorrow, which is the best excuse for making it again.
