I made a garbage sandwich! I was really happy with the bread, I subbed in about 1/2 cup of cornmeal for some of the flour and it made such a nice crunchy sandwich bread.

Made dinner tonight in honor of our wrongly imprisoned W&W hero sizzlechest. His only crime was loving (a carb) too much.






Bread is a homemade ciabatta with garlic, butter, and basil from the incredible desert surviving plant I have.

Lasagna is mashed potatoes and browned onions. Like a pierogi kind of in lasagna form!

I know this isn't really what you asked but since I love making macarons I am butting my nose in here. You want the finest possible almond flour/meal/mill for these. Iirc there is actually a difference between meal/mill and it has to do with how fine it is ground but I will be damned if I can find a cite anywhere now for that. I am totally jealous of Steve Yun's food processor because mine was a complete failure at grinding almonds down enough for macarons. Did manage to make a huge mess of almond particles though.

I couldn't sleep for hours! If anyone wants to recreate it it's a brownies made in a muffin tin. As soon as they finish cooking spoon some peanut butter in the center and top with chocolate chips. The sauce is just dulce de leche which makes it classy

I made more bagels. These are cheddar & hot pepper. That stuff in the back is how you know it's Christmas in my family. Even way back when we would spend the holiday with my grandparents and all my aunts and uncles one of the first things we did was make bits n bolts. It's just cereal and spices but boy does the smell ever bring back memories.
It's a shame you can't buy shreddies in the US but my mom mailed me some

I do not understand why ciabatta bread tastes so different than lower hydration bread but it does and I love it.

Took these:


Coated them with garlic that had been slow cooking in butter all day:


Grated some parm on top and baked that sucker:


I love bread!

Not enough water/wrong size pan probably. Looks like your pan wasn't big enough for the bread to be spread out so it had to rise up.

Looks delicious though even if it doesn't look like Focaccia!

Sorry for the overly bright picture, the white blob on top is a poached egg. Bagel is homemade with dill pickle brine. Sounds weird I suppose but they are really good! With Kale chips.

That's very nice of you thank you! And do you know what it was actually really easy as far as bagel making goes. Made the dough, formed into into bagels, let it rise about half an hour out of the fridge and then a few hours in the fridge. Boiled it, topped it, baked it.

I usually spend a lot more time fussing around with bagels and they never turn out as well as this one did.

I made pizza that I am very excited about, it's been a long time since I could just use starter and no yeast from a packet. Tasted great and the rise was not bad

Man those look so much better than the fries I end up with. What temperatures do you cook them at? I go 325F and then 375 and they taste fine but they sure don't turn out golden like yours.


Dinner tonight was salad pizza.

Crust is topped with caramelized onions and a fresh mozzarella/sour cream mixture. Which sounds weird but turned out well I think.

Thank you I stole the idea from I think the place is called Abbots and they use a bagel dough as the pizza crust so I kind of did that. Just basically a pizza dough with less water so that when you are kneading it forms a fairly thick ball rather than a sticky looser dough. I also used half whole wheat flour but that was just because I ran out of bread flour.
