I kept reading it in Epic Meal Time voice. "Put more cheese on dat." Equally as disconcerting. But they look so delicious and I hadn't thought of putting all that cheese on all that chicken and then putting a large bread upside down on it and eating it all, so I will try it. The humble beginning: 20oz AP 12oz water 1t yeast 1T salt 1T sugar 3T shortening Bake the humble beginning after it's doubled in size, gotten shaped and punched down and risen again at oh, I dunno, 450f for a while: For the recipe you will need chipotle pepper powder (I call it chiPOWder cuz I'm a goofball). 1: Chipotle peppers split and seeded 2: ChOPPotle (okay I used scissors so it's not really chopping I don't think) 3: Toasted chipotle peppers, cumin seeds, 1t salt going into spice grinder (Mr. Coffee, $10) 4: I sniffed this stuff on accident once and sneezed a lot for hours, don't sniff this stuff Other things to put in a chickencheese: Julienne those veggies, chop/mush that garlic, put some butter/olive oil in that pan. This pan: 1: Medium-high heat (this is on a lovely electric range, mind) until... 2: ...this happens. Remove veg from pan into bowl. I dunno, any bowl. I see many of you have chosen breasts for your chicken meat. I didn't. This guy likes thighs (sliced into strips against the grain). Toss them thigh strips in more olive oil, salt, pepper, and as much of that chiPOWder as you want. 1: Put butter in that pan and then put that chicken in that pan, high heat, please. 2: Fond will happen and this is good. You may now remove the chicken to mingle with the veg in that bowl you found somewhere. Leave as much chicken fat in the pan as you can. A lot happened next. I don't recall exactly what, but it involved 2T butter, 1/4C AP, 8oz cheddar, salt, pepper, chiPOWder, and a motherfuckton of whisking. 1: Chicken fond. I've had better, but then it turned into 2: This. Procedure was melt fat, make roux, add milk, whisk in cheddar and the rest of those things. CHICKENCHEESE: ASSEMBLE. Make a cave for chickencheese first. All aboard the chickencheese elevator: Mmmmm, yup. Save that cheese sauce for later in jars you have. Sorry for killing the thread earlier. Post more awesome sandwiches!

Thanks dudes, that whole ordeal took about 3 hours so I couldn't not post it. Next time I'll have a hot pepper relish cuz it needs a little more zing. Oh, Cassidy: I put an egg wash on that bread, started the oven at 500, then dropped it to 450 when the dough went in.

Toast them buns before you beat em up Shredda Chedda All up on that with that three meat chocolate beer chili son. Sour cream, onion, jalapenos GRIP AND FLIP The perfect meal for a several hours of drafting and drinking. I'll be back tomorrow with an even better one for my next draft.
