I like Akbar. It shows the Rebels are a multi-species organization that allows Fishmen to rise to the top of the ranks. Contrast that with the Empire, which seems open to British humans only.

This is not to say it doesn't have it's issues, but it's a generally fun romp. And there are no Jedi, at least not until the very end where it culminates in I, Jedi. Also it seems the two major Authors of that series aren't afraid to take the piss out of the readers on occasion. EDIT: And no Timothy Zahn never got any better. I enjoyed his books when I was a teenager but I found them unreadable as an adult. A lot of it was just moronically stupid "AH yes you found their military weakness by looking at a picture one of them drew. Sure."

Its cheaper to just hire people to run around in uniforms. While other than Chewbacca the alien characters are just in one scene.
