Most American TV has clipped the opening and closing of their shows to the bare minimum in an effort to eliminate chances to change the channel, but when it comes to Anime the opportunity to sell the music (as well as reuse a minute and half of animation each week) means most shows have meaty ones. While OPs and EDs can be slightly obnoxious to skip over when marathoning a show, there are many that are interesting and memorable.

Post post post the OPs and EDs you like. Here's a few of mine:

Planetes's OP is a short history of spaceflight to get you in the mood for some moody astronauts.

http://www.youtube.com/watch?v=HMoQ1oU8W2w

Working!! is a pretty good show, but the OPs for its two seasons are better than the show itself.

WataMote's ED is surprisingly peppy for its depressing lyrics.

Devil Survivor 2 The Animation turned to be (in my opinion) a pretty lovely adaptation, but it has what I consider the best anime ED of 2013.

http://www.youtube.com/watch?v=8w7t8zseUpU

I've only watched the first episode on Crunchyroll, which I found to be pretty lovely (in terms of translation and video quality) but the ED of High School Girls is pretty neat. It's also very misleading, since the art style of anime is nothing like that of the ED.

http://www.youtube.com/watch?v=DiCRIotUeqg

I figure all of the Durarara!! OPs and EDs are pretty good, but the first OP is my favorite.

http://www.youtube.com/watch?v=_O9hRcIAza0

And of course there's the OP to Otorimonogatari, which by itself is good but becomes fantastic when compared to Bakemonogatari's Renai Circulation. Nisemonogatari's Platinum Disco is pretty nifty as well.

http://www.youtube.com/watch?v=5CDxiweSMfg

Seconding the mention of Nichijou OPs and pretty much every Sayonara Zetsubou Sensei OPs and EDs.

Besides just watching the OPs for whatever shows we watch, a fun thing my friends and I do is try all the anime opening identification quizzes we can find on Sporcle. You have a video with short clips from a bunch of anime openings (or endings) and try to identify what anime it belongs to. You can generally find them all (along with other anime quizzes) in this category, but of course quality varies wildly.

I made a few of my own quizzes in that style that have been pretty well-received, but I doubt it's kosher to blatantly advertise them here.

Anyway my own favorite OPs: almost everything in the Raildex universe, I'm a huge fan of both Kawada Mami and fripSide. Other than that, the first and fourth endings to Eureka Seven:

I have more favorite anime OPs and EDs than I can count, so instead of listing them all I'm going to make a theme out of this post: awesome openings that tricked me into watching some pretty awful shows (this was more common in the 90s where the animation quality between the opening and the actual show could differ drastically).

Gundam Wing: http://www.youtube.com/watch?v=KpMieFLC404 (some people may disagree with me about this one; personally I found the show extremely boring, but both openings are great)
Mamotte! Shugogetten: http://www.youtube.com/watch?v=LSn5WgS2wxQ (Oh! My Goddess rip-off with an unusually snappy opening)
Nightwalker: http://www.youtube.com/watch?v=PSNgJTx1Q7U (makes you think you're in for something creepy and atmospheric... which you're really, really not)
Record of Lodoss War TV: http://www.youtube.com/watch?v=aJNErjsXXoE (this one really set me up for disappointment, since I loved the OVA)
Sorcerer Hunters: http://www.youtube.com/watch?v=95MS5NJs5w0 (typical 90s fantasy comedy with, again, a surprisingly stylish opening)
Sorcerous Stabber Orphen: http://www.youtube.com/watch?v=BvbVF2Q9qgM (seriously, this looks nothing like the animation in the actual show!)
Violinist of Hameln: http://www.youtube.com/watch?v=4d7wM6A1KtY (I think I hate this one the most for 1) making me think the series was going to be anything like the manga and 2) implying there was going to be any kind of animation in the show at all)
Weiss Kreuz: http://www.youtube.com/watch?v=RNfbtiUzp60 (In contrast to the opening, this show had some of the most consistently lousy animation I've ever seen.)

I'm pretty fond of Psycho-Pass' first OP and first ED. The second OP and ED are alright, but I definitely like those two better.

Maria-sama's fourth season OP is also nice. For such a usually restrained show, at a setting where the students encouraged to not be energetic and bouncy, it's a nice, light-hearted change of pace. I'd also third Attack on Titan's second OP, which has already been linked, but I absolutely love it.

I really liked that they played the OP over the show like they did. It does such a great job at setting the mood.

One OP that I really love is the Kino's Journey OP. It's gently uplifting, and really complements the mood of the show.

I also really like Chihayafuru's season 1 OP. The energy in it really matches Chihaya's enthusiasm in the show. When I watch it, I can't help but root for her.

The Carnival Phantasm OP gets points because it's the only OP I've gone out of my way to watch multiple times, even though I haven't seen the show itself.

For endings, I really enjoyed The Eccentric Family's ED. That piano at the beginning of it is such a perfect follow up to the monologue that ends each episode. The actual ending animation is just a set of still frames, so instead, I linked the music video.

I'm also a fan of Marble, who have done all of the Hidamari Sketch EDs.

My favourite ED tune is probably the one from Kimi ni Todoke season 1. I didn't think the show was anything special, but I think it's the only anime where I've stuck around to listen to the track at the end of every episode. It's insanely melodic and one of the very few anime tunes that I've bothered looking up. I don't, however, recall what the visuals for the ED were like.
