gotta admit i'm in the camp that removes the bones, even if it's a rather annoying hassle, i just don't like the texture also canned and in hot tomato sauce is the best way to eat sardines in fact i ate a can of that earlier just because of this thread :I

One variety is really small and includes the head, you wouldn't notice any bones in these. I think these are cheaper and not as good. Then there are bigger "fillets" with the heads and tails chopped off. The spines are pretty noticeable and I like to remove them. All I do is squeeze them so they separate in half then I can pull the spine out easily. I usually brush some of the scales off cuz they're kinda weird too.

I fuckin love sardines and herring, but i can only find them in oil. Where do you get them packed in water? Pickled herring is the bomb, too. If you chop it up and mix it with fresh tomatoes and basil, it makes an amazing bruschetta.
