Pretty good pilot, I hope the rest of the episodes can keep up the quality. A thing I greatly appreciated was that there was quite a bit of tech talk and not once did any character say "now what's that mean IN ENGLISH".

You'd definitely tear your hair out migrating your schema backwards from what you currently have to what you originally had and it'd be really really irritating and time consuming but not necessarily impossible. ...which is basically what they showed on the show. It's not far fetched.

The personal heater joke is basically the same as the "our app can get you rats" joke. It doesn't matter if the app can safely procure rats, because this is a business showcase and on demand rat procurement is not a useful mass market startup idea. Similarly, it doesn't matter if the personal heater can safely microwave your skin, because this is a business showcase and a heater that microwaves your skin is not a useful mass market startup idea.
