There's a lot of really fine work out there that we all treasure that involves countless hours of practice over something that boils down to hand dexterity and precision, artists and craftsmen are really easy examples of this. At the end of the day the thing professional gamers are good at isn't a skill that leads to anything practical outside of entertainment purposes, but that describes a lot of things you probably don't have a problem with and they invest a lot of time and energy into doing something that makes a lot of people happy, hence why the famous ones are literal millionaires.
