You can do mostly everything it can with a chef knife and a steady hand but it's easier with a mandolin. If you're cutting fries or doing something in bulk (thinly slicing more than a few carrots or whatever) it's waaaay easier with a mandolin. It stays sharp pretty decently, all it ever really cuts is vegetables. There's one I have where the hinges and poo poo are all falling off already but it cuts just fine. Get a cheap one imo. I've got a 10" chef knife I use for most cutting, a 8" thick german chef knife for chopping poo poo up, a bread knife, and a paring knife in my bag at the moment, I've got some other ones floating around but that's all I need really. I roasted some peppers and tomatillos for salsa verde and added some spinach and purslane from the garden. I ate it on tortillas with some shredded chicken thighs and queso fresco it was good.

I had a couple guests over so I made an appetizer trio of smoked salmon: ...on crostini with slivers of dried fig ...on deviled egg with chives and white truffle oil ...on potato latke with sour cream and fresh dill followed by the main: -a Japanese cucumber and shredded chicken dinner salad tossed with a sesame dressing pausing for the cheese course: -sliced manchego accompanied by raspberry and fig preserves -bleu with honey finished with dessert: -blueberry flaugnarde topped with a light dusting of powder sugar and creme fraiche was good. pic of appetizer plate.

Here is a super simple dessert. A clafoutis I made a couple weeks ago. It's basically a firm mild custard with fruit. Ingredients 400g cherries (about 25 whole cherries*) 4 eggs 1/2 cup whole milk 1/2 cup heavy cream 100g granulated sugar 60g flour 1-2 vanilla bean scrapings Directions -Pre-heat oven to 350 F -Wash, de-stem, and de-pit cherries -Generously butter a round 9 3/4" baking dish -Arrange cherries in baking dish so they aren't touching each other or the side -Using a mixer, combine all the wet ingredients and vanilla scrapings -When the vanilla is well mixed, add dry ingredients and mix until the batter is smooth and no lumps remain. -Pour the batter into the baking dish carefully to not move the fruit too much. -Place in oven and bake for 25-30 mins. Top should brown a bit and the batter should be set. -Remove from oven and allow to cool for about 15-20 mins before serving. The clafoutis will rise quite a bit during baking and then fall back onto itself while cooling -Top with a dusting of powder sugar *you can use any tart fruit you'd like. Next time I'm trying blackberries, so feel free to experiment with volume and types of fruit/berries a bit. But a clafoutis with other fruit is called flaugnarde.

There should be no crust. Add some fresh sweetened whip cream on the side if you want, but leave the rest alone.

I finished all the Crysis games and now I don't know what to play, I considered playing Spartan: Total Warrior for some reason, but now I'm not feeling it. I thought about playing Supreme Commander too, but it seems too slow an RTS, if I were going to play an RTS, it would have to be something like Emperor: Battle for Dune, which I have been feeling like playing again, but that game doesn't work on my OS.
