Actually OP, I worked in the meat department at a grocery store and old beef is best beef. The muscle tissue in beef is what makes it hard to chew when it's fresh, but it breaks down over time, making the beef become more and more tender and flavorful. This is why expensive steakhouses advertize aged steaks. Aged in this case means they keep their steaks in the fridge for a looong rear end time before cooking them. All those people at the grocery store buying blood red cuts of fresh beef? All are morons that are going to cook something that will taste/feel like cardboard. Best beef is the one on sale. Don't buy old chicken/pork tho. For those two the fresher the better.
