Wow I've had some really nice coleslaw in my day living in Alabama, they make it pretty good, and its the least cultured place in america.

In my experience the farther you get away from cultured people the better the food gets. Best breakfast burritos I've ever had came out of a broken U-Haul with the wheels removed and a hole punched out for a window.

True. It is crucial to treat your cabbage well when preparing the 'slaw.
It is also important to make the right amount of the 'slaw so you don't have to deal with too much leftovers. Leftover 'slaw leaves much to be desired.

Basic vinaigrette works real well, just apple cider vinegar/olive oil/garlic powder/salt.

This is the best coleslaw recipe I've ever made:

Lexington North Carolina Cole Slaw

1/2 cup cider vinegar
1/2 teaspoon red pepper flakes
2/3 cup ketchup
2 teaspoons salt
1 head green cabbage, cored and Finely Chopped (shredding disc if using food processor)
1/4 cup sugar - I start with 1/8 and add more if needed
2 tsp. Tobasco sauce, or other similar hot sauce


In a large bowl, whisk together ketchup, vinegar, sugar, hot sauce, salt, and pepper; add cabbage and toss to combine. Let sit, tossing occasionally, for 20 minutes. Chill.
