Bones
Veal, beef, and chicken bones are most commonly used. The flavour of the stock comes from the cartilage and connective tissue in the bones. Pressure cooking methods shorten the time necessary to extract the flavour from the bones.

I wonder if that is Khash. Khash is pretty great. It is made with the feet of cows and you just boil the poo poo out of it for like 8 hours and it tastes like distilled cow essences. I have had it a bunch of times and it is pretty intense stuff.
