Okay I skipped ahead but did the OP ever explain why they started with literally the most acidic starter they possibly could outside of citrus? Yeast don't like acid bro, that's why people don't usually ferment tomatoes.

To my understabding a slightly acidic wash is ideal but i dont know why

They are strong enough to where it is not recommended to cook them with aluminum or cast iron cook ware. There is a reason there aren't tomato based liqueurs in the supermarket. Why not stick to the tried and true potato? If it is good enough for Russians it is good enough for you. Probably cheaper too.

The other reason tomato liquor isnt in the supermarket. Its disgusting. I can put my cup out and have a sup and tell you its gross. I run it through a reflux still twice and filter it in charcoal to make sure there is no hint its made from tomato.

30+ years ago my mates gf was some brand of yugoslav, serb I think but anyway her old man was awesome and whenever we came over he would pour us drinks of some clear poo poo he stilled himself, raki? I dunno but said it was made from plums and it was better than any vodka or ouzo you could buy, he'd sell us a bottle for $5, that would get the two of us lights out I canae walk m8 o poo poo i pissed meself drunk. somehow her parents we drunk all the time but fully functional and happy as pigs in mud, must be the genes. You should try make some from plums.

Someonr told me that kale can feed bakers yeast really well. I grow heaps of kale for my rabbit and ik keen to try it out. Sugar kale wash artisan hooch

Some confrey and young nettles i harvested from round the place Blended it up. Having a smoke now. This is gonna replace the tomato paste. So otherwise normal recipe sugar yeast and a lemon.

Epsom salts and diamonnium phosphate DAP are in most recipes. I dont use them and dont know what theyre for except creating a good environment for the yeast.

OP you should make apricot wine next time. Just ferment some apricots in the fridge but don't let it go on too long, let it stay sweet. That's my friend's grandma's technique. If you want it to have more alcohol while remaining sweet you can add some moonshine to make a classy dessert wine.
