Bleu to medium rare needs nothing but poo poo and/or overdone steak needs chimichurri sauce.

Also if you gently caress up royally and overcook it make some curry and try not to over salt it with your impotent tears.

set oven to broil. insert pan into oven for 15 min. take pan out, put pan on high stove. sear steak for 20 sec on each side, then cook for 1 min each side in the oven.

top steak with 1 tbs unsalted butter and (optional) 1 raw egg yolk.

As for sauces, that slightly sour steakhouse cream sauce is acceptable, with or without horseradish. It accents the meat without overpowering it. It's particularly good with meat that has been dry aged. A1 bottles are for bashing your brains in instead of eating lovely meat.

actually prime is the top grade the usda gives beef, it definitely does mean something

yeah i mean i know you can get steaks for cheaper at a resturant but if im gonna go out to a steakhouse its gonna be really loving good because otherwise ill just make a better steak at home.

If you've never had it, try Ruth's Chris.

I recommend the 16 oz ribeye.

It's a $50 entree. It's worth it.

It's not on the menu but they will make you a side of béarnaise sauce for dipping if you ask.

They have a big wine list. I recommend an aussie shiraz with it, something like Dead Arm or Carnival of Love (both <$100 bottles), if they have it on their list. They will usually let you bring your own bottle for a ~$20 corkage fee, which can often be a lot cheaper then buying from the restaurant.
