Medium rare is the ideal steak temperature/doneness. Anything hotter and you ruined a perfectly good piece of beef.

Bleu to medium rare needs nothing but poo poo and/or overdone steak needs chimichurri sauce. Also if you gently caress up royally and overcook it make some curry and try not to over salt it with your impotent tears.

It accents the meat without overpowering it. It's particularly good with meat that has been dry aged. A1 bottles are for bashing your brains in instead of eating lovely meat.

If you've never had it, try Ruth's Chris. I recommend the 16 oz ribeye. It's a $50 entree. It's worth it. It's not on the menu but they will make you a side of béarnaise sauce for dipping if you ask. They have a big wine list. I recommend an aussie shiraz with it, something like Dead Arm or Carnival of Love (both <$100 bottles), if they have it on their list. They will usually let you bring your own bottle for a ~$20 corkage fee, which can often be a lot cheaper then buying from the restaurant. quote:The restaurant's signature is serving USDA prime steaks that are seared at 1800° Fahrenheit (982.2° C) and served on ceramic plates heated to 500° Fahrenheit (260.0 °C). prime is good i just got paid a bunch so i was feelin spendy but i usually just buy the cheaper stuff thats on special really at the end of the day what REALLY matters is cooking it properly. always butter. always.
