If it was me, i'd just pack cans of corn, green beans, whole tomatoes, packets of tuna and chicken, some herbs and spices, salt and sugar and hot sauce, granola and cereals, chocolate, oatmeal, rice, dry beans, pasta and tortillas. Maybe a hard grating cheese. No ideas about meat other then dried or canned stuff if your refrigeration is going to be iffy.
