They're all insanely good and thanks to GWS i recently learned of 'Nduja https://en.wikipedia.org/wiki/%27Nduja which is like spicy salami paste i've made pastrami a couple of times and its the king of cured meats imo but they're all good

Cure salmon with smoke and you get smoked salmon it's amazing. Cure some white fish meat or some shell fish meat with lime juice that's good too. Cured fish meat is great and pretty healthy.
