He's the first food critic to win the Pulitzer Prize, and after listening to some of his writing it's easy to see why. He applies a kind of poetry to food writing in the way Ebert did to film. On top of that his whole shtick was searching out hole in the wall places and understanding different neighborhoods. It's an incredibly democratizing way of looking at food criticism. I love Tosi and she’s a great person and she makes great food but I have to admit her episode was pretty boring. “I had a great childhood and then I worked for Wylie Dufresne and it was great and then I worked for Dave Chang and it was great” TBF, it’s kinda hard to beat Grant Achatz getting tongue cancer or a Korean vegan Buddhist monk

One of the best things about Ugly Delicious is knowing that Chang is trying to be less of an rear end in a top hat, seeing him make a big statement, which is then contradicted by Rene Redzepi, and seeing Dave bit his lip hard because he can’t blow up on camera at Rene Redzepi in Redzepi’s house during a holiday dinner

Welp looks like Chefsteps is circling the drain First they had a premium membership that was a single $40 payment for life. They had lots of great niche content for super tech nerds (centrifuges, lots of white powders) thanks to Gabe Newell’s funding. I guess this was not a great business plan but they had great output. Then they developed a sous vide device and most of their recipes were sous vide, less technical and made public, I guess as a way to advertise their sous vide device Then they laid off everyone and didn’t publish for 8 months. Been immersing myself in Bon Appetit lately. Although some hosts definitely steal the scene more than others (Brad and Molly), I feel like each host is pretty good at carrying a segment on their own. Editing is fantastic. somr things I really like are that everyone is open about their screwups, make themselves vulnerable and love ribbing each other
