And I was need to get back into anime (last series I watched/have is Kenshin from 3 years ago). So...what anime DVD's should I buy/watch?

I have been wanting to see Cowboy Bebop, Trigun, and Lain, but is there anything else out there that I should keep my eye on?

I saw Grave of the Fireflies on DVD as a 6 year old and I remember it being pretty good so that's what I'll recommend for animation on digital versatile disk.
