Escape From Noise

Before the rise of the sleek corporate sub, the sanitized hoagies and heroes, in most major cities across the US there were daring sandwich artists who pushed the boundaries of what could be done on a small budget while also pushing boundaries on taste.

Sweating away with what some would call lower quality meats and cheeses these grinderhouses put out sandwich after sandwich. Some focuses more on the hot style of grinder, others stuck to cold cuts, others endeavored to add ingredients from other cultures like Africa and Asia.

Many people in urban areas flocked to these sandwich shops of "low standing" for affordable meals and the social scene therein. The cheap production and wide availability made them popular among the lower classes. Many critics and social commentators at the time bemoaned their rise but in the end it was not they who stopped the meteoric rise of the grinderhouses, but the availability of TV Dinners. Some establishments tried to stay in business by offering hot dogs or egg rolls but, in the end the ability for American families to make their own sandwiches at home as well as the wider availability and successful campaigning by the submarine sandwich system ultimately let to the end of the grinderhouse.

Opinion on the grinderhouse remains somewhat divided. Some see the sandwich artists of the grinderhouses as boundary pushers and era defining. Some still snub them as filth. Either way their legacy survives.
