Don’t get me wrong. I love them both. And I couldn’t imagine pitting them against each other. But I have to – in my personal quest to find the better condiment.

I’ve always loved Japanese mayo, and put it on almost everything fried. But I started using it by putting it on sushi instead of soy sauce. The difference between Japanese mayonnaise and American mayonnaise is the consistency and a slight variation on flavor. American mayo uses vegetable oil along with water, eggs, distilled vinegar, salt, and sugar. Japanese mayo uses almost the same ingredients but replaces distilled vinegar with apple or rice vinegar, and egg yolks only instead of whole eggs. It also contains MSG (mono sodium glutamate) which gives it that extra flavor.

Sriracha is a Thai hot sauce made from ground chili peppers, vinegar, garlic, sugar, and salt. These are then made into a paste. It is mainly used in Asian soups, sauces, and as a dipping sauce. Nowadays, its popularity has spread, and people use Sriracha on everything from pizza, burgers, hotdogs, and dishes where spice is a desired flavor. I use it on pho (Vietnamese noodle soup), mix it with sauces to add a kick, and things like pizza or fries.

Both are very versatile and can be used not only on Asian cuisine but nowadays, on mostly everything. I like to use Japanese mayo on makis, fries, burgers, and on almost anything fried or grilled. Sometimes I’ll mix it with ketchup for a tangier flavor.
