Wife and I are doing Thanksgiving for 12 people this year. I'm in charge of the turkey, gravy and dressing at the in-laws house where it's being hosted, whilst the wife is at our house making pie and some sides. I won't have much room on the stove for anything else (MIL is doing the mashed potatoes there too) but was thinking I could svizzle something simple in a corner of the house and impress the family with my gadgetry.

Any recommendations on a super simple vegetable side dish for Thanksgiving that really highlights the benefit of cooking sous vide?

How dumb would it be to try and cook 3 big turkey roulades all at once with an Anova? I don't know if temperature recovery would be an issue adding that much 40-ish F meat all at once. I plan on using a cooler instead of a pot.

If any future Anova owners are reading the thread and wondering why the timer on their unit doesn't seem to be working, it's because the company had the bright idea to intentionally make the timer extremely difficult to use. From unpowered, you need to hold the power button for 8 seconds to enable the timer button, then hold the timer button for 3 seconds to set it. The timer state doesn't appear to be saved, so you need to do this every time you use it. In the manual they justify this by saying "in sous vide cooking temperature is far more important than the time" :wtc:

Personally I've never cared for timers on the Anovas, or any sous vizzle machine. That's what I have both a kitchen timer and a cellphone for.

Also simple math, that helps.

I have several kitchen timers, multiple appliance timers, and a Nexus 5, but I still use the built-in timer on my original Anova. It's nice to have a timer running on the actual unit itself that I know isn't going to accidentally be reset and used for something else. I make plenty of food with short cooking times where I care about the timing as much as the temperature.

It's one thing to have no timer at all, but to have a dedicated timer button and intentionally make it so you have to turn off the machine if it's already on and then hold buttons for 11 seconds every single time you want to use it is just retarded.

For what it's worth the timer can also be set via BT.

I've been way out of the loop on sous-vide cookers but want to upgrade my PID-based aquarium heater controller & crockpot setup to something simpler like an Anova or Sansaire. Is the Anova still the best option for ~$200 sous vide cookers? Is the version I can get on Amazon right now a good one, or is there some better kickstarter I should (or should have) jump on?

The Dorkfood controller at $100 also looks straightforward, but still requires a crockpot.

I did Voltaggio's chicken thighs last night for my first recipe with the Anova. It was pretty good, but I think I should have done a chicken breast instead to really see a night and day difference. Oh well.

Gonna do some 72 hour short ribs next. :getin:

Just an FYI for people getting the new Anova v2, you might want to check your water temp vs. the device readout.

I saw a post on reddit that a user was getting ~1.5F under temp from what the circulator was set to. I just checked my new Anova with my Thermoworks thermapen and chef alarm and I am under the same amount. The thermapen is supposed to be accurate to ±0.7F. For another measurement I dropped my Polyscience Pro in the same pot with the Anova and it reads 2F lower than the Anova. All the thermometers and the other sous vide circulator are at their original factory calibration.

Edit: I played around with it some more and ran the temp on the Anova up to 175F. Both of the thermometers read 2-2.5F lower, depending on placement in the water, than the Anova. I switched off the Anova and turned on the Polyscience and set it for 175F, when it settled the Anova read 175.5F on the display, much closer to the thermometer temps and Polyscience unit. I measured the water temp in several positions while the Polyscience unit was still going and gor 0.1-1F under the readout, so 174.9-174F. I am not sure if the Anova has a bad position for its thermometer and isn't getting water circulated past it from the rest of the tank or if the unit is a bit underpowered. I have them in a 20qt container filled to ~16 qts so it shouldn't be more than it can handle.

Last night I heated up some jars of milk starting in a cold bath to make yogurt. The total volume was about 10 quarts, including the jars and the milk, and the target temperature was 185°F. The Anova's display was consistently at least 3-4°F above the bath temperature as it heated, and as it approached the target temperature its behaviour became extremely erratic. The display went to almost 190°F when the bath was only 180°F, and turning it off and on would result in the display temperature jumping around several degrees. I made an emergency lid modification to cover the container and it seemed to stabilize everything.

The display on my original Anova is absolutely dead on right with the water bath at all times. I've never seen any erratic readings or behaviour. The only thing that happens when I approach the heating capacity in a large uncovered container is it simply fails to reach the target temperature while running continuously.

I added a note on my post above, looks like the readout is pretty accurate and either the sensor is in a bad place or it is just not circulating the water enough and is under powered.

I am running it up to 177F to see if I can get it to hold consistent at 175, I can max my unit out if you like and see if it goes funny at 185-190F.

With the soft lids like that you can just use strong scissors or an exacto knife, for the hard plastic ones a dremmel or band saw work well.

A hole saw is best. The original Anova has a diameter slighltly under 3" iirc so use a 3" hole saw (please double check my lovely memory with a ruler). I don't know the diameter of the new one.

That makes sense, until a few days ago all I had was my polyscience, those things are not round.
