Food Wishes is great. Some people don't like Chef John's idiosyncracies but I think he's super entertaining and informative. Even for recipes I have no plans of doing, all his little tips and tricks have helped me become much more skilled in the kitchen.

I'm not that dumb, but yeah it makes a hell of a mess. I would almost rather put them in the oven with the oil. At any rate I don't think I did long enough , somehow. They seemed to be almost oozing when I was taking them out of the pan, but basically came out like a baked potato. It tasted good, but chopping them up is a waste of potato and, time. The comments in the blog post for that one describe another type of this, where they roast them whole, with red potatoes, then smash 'em part way through so they absorb the butter and broth.

No real issues with the oil spitting unduly during the frying stage but during the baking stage the bottom half didn't seem to absorb the butter/broth the way I thought it would and the result was - as you mentioned - basically a baked potato with a crispy top. I'm not sure I get how the bake-then-smash technique would work in practice since it'd be really hard to smash *just enough* to break up the bottom without having the whole thing fall apart. Any of the videos from How to Cook Like Heston, Gordon Ramsay's ultimate cookery course/ultimate home cooking are great, especially when you watch them and buy the books to go with them as you pick up little bits and pieces not mentioned in the book. I bought the two Ramsay books, I've not bought the Blumenthal book but I would honestly think I've done over half of the 100+ recipes in the ultimate cookery course book. Numerous have been done so much the pages are stained during the cooking process. I'd link them but I'm phone posting, there are torrents and so on available as well but I highly recommend them.

Chef John is the man and while his voice and humor got on my nerves at first after I tried one or two of his recipes I got over it. Now I even chuckle at his corny dad jokes. The fondant potatoes recipe worked out great for me, no problem with spitting oil. The really simple thyme and butter combo was so on point, as well. I don't usually keep mayo around since I typically use so little of it that 2/3 of even the tiniest store-bought jar goes to waste. Nobody better badmouth Food Wishes while I'm around Chef John rules, and it was his videos that got cooking to start clicking for me. A lot of them have some complicated ingredients, and I generally prefer simpler recipes, but I made his Garlic Lemon Chili Broccoli a couple days ago, and it was some of the best salad dressing I've ever had - took my brocc from crap to snap. https://www.youtube.com/watch?v=PqSZ89FqpiY Yes, his cadence is kind of odd, but it's definitely just part of the videos at this point. The one modification I've made is cutting down on the amount of stock/braising liquid by almost half and using a smaller cooking vessel to compensate so it continues to boil in its own juices - that gives a smaller amount of gravy that actually matches the portion size rather than going down the drain at the end and ends up richer tasting to boot. Chef John continues to be my favorite YouTube presenter. Good recipes, good production values, and most of all straight and to the point without any bullshit or pretense. I've even come to like his speaking style and corny dad jokes.
