Lame that the 24-bit WAVs only come with the digital-only option. Seems really arbitrary. Not that I can necessarily tell the difference, but it bugs me enough to possibly deter me from the vinyl option...

There's no reason to buy the 24bit wav. your ears will not be able to tell the difference between that and 16bit. Your ears will also likely not be able to tell the difference between that and 320kbps. You can convert wav to ALAC and put it in your iTunes.
