Voyager expects me to believe that Tuvok, a Commander in Starfleet for like 100 years and served under Captain Sulu but has never heard of the Nazi's or seen a Swastika. I think maybe Tuvok just resents being on a Human ship and is being an rear end in a top hat to everyone constantly.

I always thought Voyager was a bit hit and miss and I never really liked how they usually never kept any modifications they made to the ship even if it vastly improved things. One of my favourite episodes out of any Star Trek show though was The Chute. I thought it was really well done.

Yeah probably the biggest flaw with Voyager was how there was no sense of continuity and always lots of cheap resets to return anything to the status quo.

That's not how that thing works and what it even does. I have a video toaster I'm guessing the renderings were actually done in lightwave (which came with the Toaster) which people might still be familiar with and if they had the individual scenes somewhere on there it might be possible to import them into more modern software. (and render them in mere seconds, probably. These computers could not do a lot in that regard, things such computers would pre-render for days a current consumer-grade one can do in realtime) That's if you're talking complete CGI scenes, if it was CGI inserted into actual, recorded footage then things are a bit more complicated (and that's also were things like the video toaster would come in play) but with modern computers this also wouldn't be a big thing and certainly nothing you'd need the old hardware for. (which is hideously complicated to set up, complicated enough that they actually might not have anyone familiar with the pitfalls) I honestly doubt though that they saved all or even very much of this, especially considering how much effort that would've taken. The recordings of the actual, finished work are probably everything that's left at this point. Redoing all the CGI is probably the only course now. I saw TNG redone for HD and I quite frankly wasn't impressed. Everything just looked very cheap. (Like you could see how parts of the Set were obviously just hastily painted wood) I honestly don't think it adds anything worthwhile. More isn't automatically better. I like to watch old stuff like that on my old 5:4 1280x1024 Samsung. That's about as good as it needs to get. Voyager made me stop watching Star Trek for about 10 years.

Yeah, I get the feeling that B5's effects would look even cheesier at anything beyond 480i. They're also simple enough to redo given a big enough budget. B5's render farm was Amiga-based for the pilot, then went to faster machines (SGIs etc) as the show went on. Not sure if it was all done in Lightwave for the duration of the show. I do still kind of appreciate what the remastering did to TNG - sometimes you got to see how wooden the sets were, but other times you got to see all those great easter eggs (I swear half of those LCARS displays were printing out anime summaries). It certainly didn't detract from the show.

Crewmembers having to come up with new recreational activities that don't use holodecks and the precious holodeck power. A progression of the "Rec Deck" through the series until it looks like a Dave and Buster's in space by the time they get back to the Alpha Quadrant. Voyager then gets bought by Quark as a sort of Riverboat Casino in space..

Not really. Everyone either hung out in the dining hall or the old timey Irish town. On TNG, while Ten-Forward was always supposed to be there, the original designs had lots of smaller social areas around the saucer section. I believe the idea was small lounges and coffee house type places, things like that. I believe it was cut for budgetary reasons, but I can't quite remember. Also, on Enterprise, you get a quick glimpse of a LCARS display of an enterprise from the 27th century or something. People love to make fun of it, because it's so bizarrely proportioned, but according to the designer, it was out of perspective because it was supposed to be a generational ship with shopping centers, several universities, and suburb areas, so it's supposed to be massive. I like that idea the best.
