  4. Bring to a boil, then simmer for 45 minutes, stirring occasionally.
  5. When you stir, use the metal fork to get rid of the floating chickpea shells for a more comfortable texture to the end product, and possibly less gas.
  6. Similarly, use the spoon to remove the foam that should gather up.
  7. After 45 minutes, add the baking soda, stir thoroughly, flip onion over. WARNING: this will result in serious bubbling and foaming as the alkaline baking soda interacts with the acidic boiled chickpeas. You should make sure that your pot is tall enough for the whole thing not to spill over the sides.
  8. Simmer for another 45 minutes. Check for softness: use the stirring implement to remove a chickpea, cool it down under running water, and press between your fingers. If the chickpea squishes to a pulp, it's ready.
  9. Now there are two options: you can either cool down the chickpeas before further processing, which will make them last longer, 3-4 days or do the processing immediately (which will make it taste nicer, but will last for maybe a day or two. The latter requires your processing to be able to withstand the heat.
  10. Further two options: either do the following steps with only half the quantity, and then mix in the rest, to make for a good not too rough, not too smooth texture, or do it to the whole thing with the potato masher
  11. Remove the onion.
  12. Process/mash until there is no more effect.
  13. While continuing to process/mash, slowly mix in the tahini, salt, and cumin.
  14. Squeeze in the lemon, then process/mash or just mix.
  15. You're done!

I recommend eating it with flatbread, naan, pita, that kind of thing. Possible additions are mushrooms fried in olive oil, or grilled meats, or really anything savory or spicy. Just plain olive oil, paprika, and additional cumin are common garnishes.

The onion you can slice up to eat in a salad, it's really good.
