Those don't look good even by the standards of gluten free pizza crust. And it's true that even the best gluten free pizza crusts* don't compare to actual pizza crust; gf is always going to come out more cracker-like than the wonderful stretch of a good pizza crust with wheat in.

*Risotteria in New York, in case anyone wants to know

It's hard, but good pizzaiolos can get a circular crust with amazing precision.

In general, there's a feeling that something is only "artisanal" if it has obvious flaws and imperfections. Craftsmen for thousands of years have been able to get extreme precision with their work, which you can see by looking at any example of, say, medieval jewelry.

I had a thought. What if you made a gluten-free crust that embraced it's structural properties?

Like, what would happen if you did something like made very thin disks of gluten free pizza, say crepe thin. Put one on top of the other, maybe add some seasonings, then gave them the pizza treatment?

I've seen gluten-free pizza crust made from ground cauliflower and all I've heard is that it's not the same and only do it if you have to or are curious enough. Which, of course, makes me want to try it out of morbid curiosity.

I made one since I make at least a pizza a week, and it tasted ok, but the crust was half cheese anyways so not really healthy, and was a lot of work to make "dough". Rice cauliflower is more effort than proofing some yeast, imo. I also had cauliflower burps for days. This is a #cauliflowerpizza but definitely not made by me.
