I actually had to ask someone what deconstructed meant because I kept hearing it on Cutthroat Kitchen. It was as if the word meant: this food technically doesn't meet the requirements for a good dish but it it's technically the dish and it's "good".

Edit: Just to be clear, deconstructed is essentially some fancy plating where you're supposed to put the food together yourself.
Deconstructed and build your own were originally separate fads.

Deconstructed is more about using alternate techniques to highlight base properties of the ingredients going into some dish. So like a deconstructed hot dog might be spicey diced pork and beef steak, with croutons, mustard-infused oil, and tomato jelly.

Build your own stems off some places borrowing parts of hot stone cooking, lava cakes and brownies, mix in your own egg yolk/poached egg or similar reviewing so well that "interactivity" has become a required aspect of haute cuisine. There's only so much interactivity to add so someone checking the boxes on a prix fixe menu might just add build your own sandwich.

They've been derided as trends by both normal people and fancy pants because deconstructed often becomes code for "please don't rate the aesthetics of my dish in your review" and everyone without a huge stick up their rear end stopped being entertained by making their own food after paying $100 a plate as soon as it started happening. Deconstructed is basically a big in-joke (except like 1 time a year someone might use it seriously in a way that is appreciable) in Cutthroat Kitchen and Chopped because its the fall back word when they run out of time or resources to do a traditional plating.

That's loving awful looking. There's like 5 places near me that do spaghetti pizza and they're mostly pretty good. I posted these a year or so ago in this thread









They're all kind of similar in style. Some are trash (Sugarbowl) and some are incredible (Cafe Rosa Rosa). They're all like a thousand calories of carb bomb a slice which probably goes without saying
