also buy some sanitiser; starsan is quite good and should if used properly last forever. i do not use it properly.

don't do a lager first, because they need quite stern temperature control and also off-flavours are real obvious, and also because lager is poo poo. do a ale

e: imo you should chuck some sugar or more malt extract into that kit, 1.7kg extract in 5 gallons water is gonna give you some 3-4% brew.

yeh my kit came in at about 3.4% ish, either add more malt or make less (19L instead of 23L).

have just pitched my yeast after waiting loving hours for the temperature of the wort to come down to something semi reasonable. it's still a bit too warm. i think i need to invest in a wort chiller.

nah

seal up your wort in the fermenter with an airlock, aerate and pitch the next day. assuming your sterilisation is good this will do you fine. you might lose some hop oils but you can always dry hop a bit if you're desperate

those of you that brew, do you drink about as much as you always did, or do you still go to the pub at weekends AND drink 30 bottles of homebrew (because it needs using up!) during the week?

I'm tempted by the idea but don't want to transform my moderate alcoholism into the full-on raging variety.
