I forgot to mention that it's a security desk PC. Yeah if you can only barely fit Windows + regular software packages in 128 GB you need to put in a bigger system disk. But otherwise you could also get away with putting a spinning disk (maybe even a USB thing) in for the data/video storage. Also by not putting SSD's in a regular office-use PC you're probably wasting 15-30 minutes every work day just waiting for disk access. Ask your management to calculate the ROI on that.

They'll be happier using them, lovely bloated apps like office will load much quicker, etc. I'd rather have a slower system with an SSD (over a hybrid, even) then a faster one with a spinner for office work.

It's basically enterprise'ing m.2 drives. It makes sense, the 2.5" drives are just that size/shape due to the legacy of having to stick a spinning disc in there. And m.2s being all bare components is not the best for hot swappin. It will be interesting to see if it catches on though or if everyone just flips Intel the bird.

The office laptops at my last job would take an eternity to boot with spinners due to all the crap the IT department had them loaded down with, going to SSDs probably cut like a full minute or more off of boot times, a larger difference than I saw when transitioning from spinner to SSD on my home PC.

Hella storage capacity with that, read speed is still pretty ok, but you can only erase it 100 times. One of the companies I help with IT matters are looking to upgrade their workstations and it's infuriating to me that Dell won't let me swap SSDs in a lot of their base configs. It would make such a big difference in their day to day use. She's also vehemently against macs which would simplify this. If I'm missing something here, please feel free to call me an idiot and point me in the right direction. I haven't dealt with PC oems in a while since my company went all Mac.

For the vast majority of office users an SSD is the single best thing you can do - for ‘normal’ office stuff there is bugger all difference between a Core2 Duo and and a quad core i7 but there is a huge difference between a mechanical disk and SSD. Also 128GB is ample if you use a SharePoint or whatever for documents and the PC isn’t shared between too many users.

My number uno recommendation and upgrade for any business computer is a SSD. At this point I keep a rack of cheap Sandisk Ultra IIs for office peoples. A quick Acronis clone and "OMG THIS COMPUTER WASN"T THIS FAST BRAND NEW?!!"

Seriously, an office can get by on a fleet of i3 machines as long as you have a decent amount of RAM and an SSD in them. I'd rather use that than an i7 with a spinning disk in.

Between the Sandisk II and the 850 EVO, what should I probably go with? 500gb, they're both on sale on Amazon (150, 140 respectively.) Also, is there any risk in continuing to use the 840 EVO heavily? I was thinking about using it for a Linux install.

840 evos have performance degradation problems, they've had several firmware updates to mitigate it but it's something fundamentally wrong and even with the latest version they still have issues. I'd keep using it for a non critical system though.

Remember that the most recent firmware has to be loaded via the Performance Restoration Tool, not Samsung Magician.
