I'm looking for laid-back moody, atmospheric acoustic folk in the vein of Panopticon's Tamarack's Gold Returns (https://www.youtube.com/watch?v=HxCLgSJmhgw ). They're a black metal band so the rest of the album really isn't like that. Everything I find either has vocals which I don't really care about, or is a bit too intense. Thanks for any recommendations!

Maybe some Friends of Dean Martinez? It's got some electric slide guitar but its pretty laid back and mellow. Has a southwest desert feel. Not really too folky though now that I've had more time to think about it.

If I like both metal and Celtic music, what're some good suggestions? Any particular I should look up? Neoclassical metal is also really cool, anything with a compelling melodic line is good too, and I'm open to some foot-tapping non-metal Celtic as well. Stuff that makes particularly good use of violins and violas are also appreciated!
Neoclassical, melodic, folky metal? My friend, sounds to me like you need some Wuthering Heights. I wouldn't call them straight-up folk metal, nor straight-up neoclassical metal, but they have elements of both, and they have the "compelling melodic lines" part absolutely nailed down. Salt is one of my personal favourite albums of all time.

As for pure folk stuff, Eluveitie used to play pretty heavy folk metal with screamy vocals and everything, but their latest album apparently drops all the metal trappings and is just bouncy folk music now.

I really really like the song My Funny Valentine and want to know what I should listen to to hear more of that kind of thing. I have little interest in jazz that's improvised and free form, I'm looking more for the stuff that's essentially pop music with jazz chord progressions and instrumentation. I'm guessing there might be some good compilations out there of that kind of thing?

How about more contemporary pop songs covered in that sort of style*? Because there's this music group thing called Scott Bradlee's Postmodern Jukebox who do exactly that. They're pretty great.

nat king cole, lena horne, sarah vaughan, billie holiday, nina simone, madeleine peyroux. maybe even some louis armstrong or dizzy gillepsie

there's probably a bunch of grey market "greatest vocal jazz standards" compilations out there. i don't have a specific recommendation though

you could delve into chanson too... aznavour, jacques brel, yves montand, early gainsbourg, etc

Specifically, I'm looking for analysis of these composers' musical inventions and developments and their impact on the field. He's been exposed to a whole gamut of stuff through his two older siblings' tastes and mine as well, and he's pretty clearly all about 70s radio rock - Kansas, Boston, Rainbow, but some soul and R&B as well. Not into Sabbath or anything too heavy (sadly). I'm looking for recommendations of other compilations/soundtracks that scratch the same itch. Already all over the Almost Famous OST, which has plenty of stuff he likes. Got Pulp Fiction as well, but I figure there are some collections out there I'm brain-farting, any recs appreciated. There's a series of compilation albums called The Best Seventies Album In the World... Ever! which might be worth checking out. I believe there are two. There are also four entries in the same series for the 60s, which are also good fun. They cover most of the big popular trends.

As far as soundtracks go, how about the Saturday Night Fever soundtrack? It's great.

singles/greatest hits comps are the best way to go, as mentioned pops not really an album genre (although most artists have deep cuts if you have the time to dig em out) unless you dip into r&b or 80s pop and even then for someone like madonna there's not really a reason to get a particular lp instead of the immaculate collection to start with
