No pictures because I am a shameful person, but today I made an elk burger with gruyere and griddled onions. Those Eclipses are great if you need out-of-season tomatoes. Tomorrow I will elk burger again. That was really amazing, especially since I cooked the onions in the rendered fat from the elk meat.

I got this monster after recommendations in this thread: Smashing is so much easier now. This is my second attempt at smashed burgs, sorry for slightly blurry photos. Also the supermarket only had 85/15.

I'm probably buying that spatula, but I bought this trowel for my smash burgers. You probably couldn't use this on a cast iron skillet. Only on a flat surface I guess. They're both wrong, you can't put the lettuce in direct contact with the patty or it'll wilt from the heat.

Yeah but the Google burger puts the cheese on the bottom, Jesus Christ I can't even look at it. I thought that was such an obvious sin it wasn't even worth mentioning. Also, yes, a slice of red onion is far superior to the mushy bleh-ness of tomato.

I'm a sucker for the lettuce/onion/tomato trifecta, so long as all the ingredients are good. Problem is, most of the year fresh tomatoes look like ghost skeletons when you cut into them, so I have to wait until sweet, sweet summer homegrown tomatoes.

Kenji is a cool and smart dude but it's creating additional dishes to clean.

Yeah in his smash burger video, he uses a trowel and a paint scraper. It's fun but as the guy doing the dishes and trying to manage my kitchen space, it's kinda silly. And yes I'm aware that the spatula I bought is big but its mostly 'flat' and it's still 1 less than trowel and spatula/scraper. Raw onion is great and I will loving fight anyone who says sauteed onions are better on a burger. At most, you can have both, but the raw onion is essential.

Sauteed onions are a total waste and one of the greatest burger-related disappointments in my life was when I ordered a burger with "onion" and it was one of the best burgers I'd ever seen... except it had these weird floppy translucent things on top instead of a nice crunchy slice of red onion.

The trowel allows you to easily smash because you're putting weight down from directly above the surface, rather than offset in the case of a spatula. Both work, but I can see benefits from each method. I don't mind having two tools. The trowel and spatula together take no time to wash because they're just smooth metal.

You can apply pressure straight down with a spatula by just taking a rolling pin or a can or a glass or whatever and pressing down on the top side with that

OTOH I already have a metal spatula and a stiff object on hand in my kitchen right now instead of having to go to the hardware store and buy/find storage space for a trowel I will only ever use for one specific thing .
