Gun Metal Cray posted:dark roast: good if you're getting acidic flavors out of light to medium roast, try a longer extraction at lower temperatures. Dark roast you can just use boiling water on because all the sugars have been burnt into carbon and it will taste the same pretty much no matter what you do to it. Lighter roasts need to be babied more, I usually use water around 180-190 F. Also bean quality matters way less when you've torched the hell out of them. I wouldn't even look at folgers light or medium roast but their french roast will be as good as any because torched beans is torched beans. Whatever it is I'll drink it anyway. Good beanwater > bad beanwater, but both are better than no beanwater

I don't hate dark roast but light and medium roast can have a complexity of flavor that's just gone in dark roast. I got an Ethiopian medium roast the other day from the local beanery that has the slightest hint of blueberry in its flavor profile and it's just fantastic. For ref, I'm using an aeropress, non-inverted method. 16g coffee/shot 185° water 25s bloom/25s stir before pressing

the good beans place is like 3 blocks from work, it rules. I accidentally overground my beans and it's really hard to aeropress them, but I don't want to waste good beans. I'd take them home and use them as espresso powder in recipes but mrs. mindset has serious caffeine sensitivity to the point that even chocolate turns her into a jittery mess, and my only brew tools want coarser roasts...
