i got my silvia espresso machine serviced for the first time since buying it eight years ago, and unsurprisingly it is now producing much better coffee. i kept up with cleaning but the service made a real difference.

I just learned that Bruegger�s (p.deece mass market bagels, edible if you aren�t in NY or Montreal or Chicago: at least they boil them?) and Einstein�s (awful round bread) are owned by the same company. They also own Caribou Coffee which is better than worse-than-Starbucks Dunkin. I am drinking Caribou Coffee. It is good.

E: Which obviously raises the question why Bruegger�s doesn�t use Einstein�s everything bagel topping (which, unlike Bruegger�s, has the essential addition of caraway seeds)?

Serious post - Einstein's was acquired by te company in 2014 and Bruegger's was acquired in 2017, so it's probably just a continuity of recipes thing so as to keep a consistent consumer experience.

there's a cool bagel chain around here called "finagle a bagel". they cook the bagels right behind the people who serve you bagels, so you get to see them dumped into the boiling water and then fished out and stuffed in the oven. and then they have a giant spinning blade for cutting them in half
