Sticky Tofu Bao. Proof the better half is a great cook! She looked at a few recipes and synthesized them to come up with that.

I think this recipe is a good starting point. Just use frozen Bao if you can find them, we've never attempted to make them.

I feel that one area that causes a lot of frustration with cooking, baking in particular, is recipes that are written that assume the reader has knowledge & experience of certain (often basic) techniques.

I've had to troubleshoot failures for friends and it's usually a basic issue such as not understanding what "rub butter into flour" or "cream butter & sugar" actually means, and what the result looks like. Heck half the time I don't even know why I'm doing these things, I just have the experience to know how to do them, and what they look like when done right.

Not everyone can look at a lovely recipe for bechamel and realise what they're asking when they tell you to dump flour, milk, cheese and butter in a pan is that you actually have to make a roux, gradually add the milk and then melt the cheese in at the end.

Mon dieu, I've never even considered HOW to make bechamel or that it could be totally lost on people. Because OF-loving-COURSE your roux has to be right first.

Now I'm going back over all the unwritten recipes I've sent to people over the years that's basically "uh here's the ingredients, just do the thing and it will turn out like this <insert gourmet food porn>
I mean I always thought cooking isn't magic - it's loving simple. But maybe it's not.

I mean poo poo, now that I think about it... Even making a simple French omelette really relies on a lot of practiced technique that probably not everyone "just knows how to do". Ugh now I want morels.

I mean it's one thing to just Google some poo poo, and then Google the rest of the poo poo from the first poo poo that you don't quite get, but it's definitely a whole other thing to have grown up practicing it and seeing it in action and understanding the importance of everything.

Oh no now I'm reliving all my food-snobbery moments trying to man-splain to my friends why their crepes are just lovely pancakes, or worse; when I actually asked to speak to the Chef to explain that oyster stew is more than just loving sea snot and milk :gonk:

I mean I never meant to be a rear end in a top hat but now I'm starting to think that it not necessarily how I was perceived.

You know how people always go on about how “they should teach X in schools!”? In NZ, when you hit what is now called Year 7 and 8, age 10/11 - 12/13, everyone does compulsory “Manual Training”. Generally cooking, sewing, woodwork and metalwork, although it varies slightly. The cooking side took you through all the basic techniques like rubbing and creaming and roux and so on.

Of course half of people turn around and say “wait, I was supposed to learn something from that?”, so like anything there’s no helping some people. 90% of the things people say should be taught in schools actually did get taught if you were paying attention.

This is where I learned most of my basic techniques. :nz:

We had a really good "home economics" department at my high school. Great teachers, lots of emphasis on learning those techniques like making roux, making custard etc.

I wish I had paid more attention in Wood- & Metal- working but I guess I use my cooking skills a lot more everyday.

That can't be understated. It's like troubleshooting a basic computer problem with a senior. The most basic things need to be explicitly spelled out, and even then assume nothing. I just got off the phone with my 73 year old mother who was having printer problems and program association problems and what would have taken my literally less than 2 minutes in person was an agonizing 2 hours even with the ability of her to text me photos of what she was seeing.

Speaking of, I've literally never tried Windows remote desktop app. I'm sure once I'm tunneled in it would be a piece of cake, but how difficult is it to set up on the her side? Do ports or anything need to be opened on her router? Because if they do holy poo poo, I don't know if I could, or should attempt to walk her through that.

I loving hate to ask this, but any Austin area goons available to lend a little muscle Thurs and Fri?

Ex thought she had several people from work lined up, and uh, they all decided "nope" at the last minute. My roommate is out of town (not that a 6' tall twig that weighs 155 could really move this dresser anyway...). I just need to move a couch, dresser, and TV stand. Loading up at my old place, dropping most of the stuff off at ex's new place (a mile away - both 2nd floor apartments), the heaviest thing (a 1950s MCM dresser) is coming from the old 2nd floor apt and going into a single-story house about 10 miles away (off of Braker). We have a box truck lined up.

Should probably be two hours at each end - loading truck on Thurs afternoon, unloading Friday sometime. I'll buy food and/or booze. Full disclosure, the dresser will be an absolute bitch (without drawers it's still over 200 lbs, though if we can at least get it onto my dolly at the other end, I should be able to get it). Everything outside of the dresser is fairly light, just too bulky for one person.

The bulk of this is off of 183 near the mall, dresser going to Mopac and Braker. I'm driving the truck. I just need someone to lift. :smith: Worst case, I have the truck until Saturday morning, but I absolutely have to turn in the truck that morning.

I can't express how thankful I am just to be employed and stable, and my immediate family is virtually at zero risk from COVID, (mom's 70, but in fantastic health for her age, and taking all appropriate precautions) it sucks to say, but I'm almost glad my dad isn't around anymore, 'cause I'd be in constant fear if he was, how he went was a whole lot better than being hooked to a ventilator.

There's no shame in being emotional, I hope you can sleep good again soon.

My tips over a few years of figuring this out.

Heat your oven to as high as it gets, put the pizza stone in it for an hour or so.

Take the stone out, put your mostly-shaped dough on it. Spread it out. While it's on there, put the sauce on. The blind-bake for the 3-4 minutes while you build it will get you a good crispy crust outside even with a pathetic oven that only goes to 540 degrees or whatever. Once it's built brush the crust with a light layer of olive oil and then salt it. Then you bake it for like 4-6 minutes until the crust has brown bubbling underneath/the cheese is melted.

Also avoid too many toppings (that's more cheese than I'd use and I'd use fresh Mozz if possible), overtopping will result in a sub-optimal crust no matter what. Then slide it onto a cooling rack once it comes out.

This....this is my life right now. We turned the unfinished basement into more garage space which is great until you want to get one of the cars in there out for a drive. Move the Wife's car, open the wall, roll the 320i out since it's blocking everything else then I can finally get the car I want to drive out. So for a quick drive I have at least a half hour before and after of pushing cars around on wheel dolllies. So yeah it's great having space for lots of cars inside but getting them all in/out through one garage door is a pain in the rear end. Next house we'll definitely have a garage for the daily drivers and a separate one for working and storing the other stuff. First world problems.

All this cooking/baking chat is interesting. I bake maybe twice a year, wife does a few more times than that but it's pretty rare we bake anything. Cooking we pretty much stick to basic meal prep of cut, season, throw in air fryer or on the grill. About once a month, before COVID, I'd put together a real nice meal for us...most of them even turned out edible.

Didn't know there was a slow release version, that sounds ideal. This is good to know thanks.

If you don't mind me asking, how long have you been using it? Are there any long term issues with it? I just don't know if I want to take it daily and was hoping I could use it as needed when I have a busy day lined up to help me focus etc.

I've been taking it on and off for about 20 years. I quit taking it for a while after heart surgery, but picked up again a few years later. It makes a significant difference for me. I can tell when I've forgotten to take my morning pills. I just feel dopey all day without it. I haven't noticed any long term issues. Some people find it depresses their appetite.

I think there have been studies that show that taking it every day helps with the ups and downs. Your brain kind of gets used to and anticipates it. Taking a break from it just means your brain has to adjust to it all over again.

One pill of 30 mg of generic methylphenidate SR daily does it for me. 10 mg worked reasonably well in the 4 hr pill, so 3x in the 12 hr pill did the trick and smoothed out the highs and lows - plus I didn't have to take them constantly.

Adderall isn't quite the same stuff, so experiment around to find the right one that works best for you.

Thanks I appreciate your insight.

My generic Adderall is "amphetamine salts" and from a quick search it looks like methylphenidate is mild in comparison so that could work better for me, I'll have to talk to my doctor about it the next time I see him.

Half of a 10mg is a bit intense but I probably just need to get used to it.

Adderall trip report.....Yeah I won't be taking this poo poo on a daily basis. Felt like I was hopped up on a mega dose of caffeine then came down HARD like I was coming down from a night of partying doing lines of coke. And that was just from half of a dose :v:

If TCC is to be believed you should really try plugging it
