any advice on quitting a corporate job to work in brewing or baking? so far my plan is: 1) find job in brewing or baking 2) quit corporate job

I'd you're going to, do it in that order. Going it alone in this economy will be a jape unless you're a seriously good marketer. From friends who've gone that way: The big breweries are interested in mostly hiring specialists for the beer-touching. Graduate food scientists, plant biochem and fermentation engineers. The rest of the work is just the same as anywhere else. Small brewing is almost entirely about who you know and what they think of your amateur work.

Based on the people I know/follow who work for/run small bakeries or microbreweries - do not do 1 if you want to earn good money, have any kind of job security, get a good night's sleep, or be confident about your financial situation week on week and month on month. If those aren't worries, then fair play and like goatface said, it's all about the networking. If you mean getting into a larger established business in those fields, that's probably very different.

The insecurities of moving into either of those industries are a worry, but I don't feel particularly happy/fulfilled by my current job. Sure I'm good at it, but it's making me miserable, and I don't want to look back in 30 years and think "I wish I had done something else". Maybe it's just a "grass is always greener" type situation? In any case, thank you for your thoughts and advice!

Previous to WFH we had a broken tracker. WFH and suddenly a brand spank new tracker is unveiled. Click per case. Click per break. It records sign in and sign out time, and periods of unproductivity. Blaaaaahh

My sister got redundant and was planning to have a baby so she was kinda sitting at home while looking for new jobs but she wanted to do something in the meantime and got herself a short baking and custom birthday cake course from another local baker lady. (this is no in the UK btw, so ymmv) In the beginning, she went hardcore marketing on social media, which came to her naturally as she's pretty much a smartphone addict. Started to make naked cakes, simple engagement or party cakes which went for surprisingly (*) good money. She started doing complex birthday cakes, especially the kid bday cakes with faeries or cartoon stuff like Spongebob went like crazy. Around the first year, she was non stop baking and also started a boutique chocolate business and held workshops (I think this was the best money/effort-wise as she could have 6-8 people or 4 couples in one day charging a cake's worth each) and she hired a college student as help. Well, it sounds pretty swell but baking, especially boutique cakes is time intensive as gently caress. She was happy to receive her payments but it was after a one/day effort with anything that comes with having customers (last-minute changes, random rear end requests). When I ran some numbers, she was pretty much working above minimum wage but with more hours and effort. She was thinking of opening up a small bakery for scaling up her production with more assistant and poo poo but she got pregnant and then COVID hit. I mean, she was kinda "oh I'm making more money in a day" but when you make an hour based calculation, why not become a PA or do data entry, clock out at 5 and enjoy not having to worry about anything else? I think, with the cooking/brewing/baking is you'll probably need some food safety-related checks and maybe some insurance and lots of overhead (having to deliver the stuff you make etc.). I don't know it's a good idea to quitting your corporate job in this environment and upcoming recession (?) to become a baker or brewer but it's also not the worst idea if you like hands-on stuff. I have to add, my sister has a disability in her right arm after a traffic accident so her hand and wrist articulation is quite low compared to ours so it takes a bit longer for her to do things like whisking or frosting. I think she said being a chocolatier is less effort and she was able to make more stuff and made more money due to scale (less trips for materials, can use molds to produce in higher quantities etc.) I mean, the stuff she made looked and tasted (especially the pistachio filled Belgian chocolates I posted below) exceptionally good for someone literally had no previous baking experience and had like a couple of days "formal" training:
