The Expanded Universe never explained where humans came from, and even in-universe there are only theories that they're originally from Coruscant, or are descended from a totally separate species that used to live there. In the 90's there was a (rightfully cancelled) book in the works that would have explained that the first humans were actually colonists from Earth who fell into a wormhole that sent them back in time.

There's also KOTOR where in an optional sidequest you can listen to the oral history of the sand people and they imply that humanity was taken as slaves from Tatooine and spread throughout the galaxy by an ancient alien empire, and then Tatooine was lasered into a desert from orbit in retaliation for a rebellion. And I think there was a thing at one point that might've implied that Corellia was the original human homeworld, and the entire Corellian star system was brought to the galaxy from somewhere else in the universe. People poke at explaining humans in Star Wars, but nobody really cares enough for anything to stick.

I remember in one of the X-Wing books (the decent ones), there's an argument over who gave more for the Rebellion, the Bothan people or the humans, and it was claimed that Alderaan was the human homeworld in that one. Not that it was particularly canonical, even at the time.
