So the best before end I’ve put on this batch is December 2020, but that’s very much playing it safe- I’ve had some batches last three or four months without going mouldy, while others have lasted about six weeks. If you keep the fudge cold then you’ll certainly maximise its freshness. Basically I don’t use any preservatives (unless contained in the extra flavouring ingredients), so I tend towards a closer date to avoid any disappointment. This is very specifically ‘the Christmas cook’ though.

Gammon is the easiest roast imo, because it has such a job water content that you can go over or under the optimum by a decent margin and it is still good. Might get one out of the freezer now

Yeh I like roasting a gammon cos you dont need to sear it first, no seasoning needed, no carcass to deal with afterwards. Just chuck it in the oven till its done

Probably not the best place to post this.. goons being goons & all that. I've not seen my parents in 20 odd years.. Yesterday I got a text from my dad letting me know my mum is in hospital waiting on a operation for ovarian cancer. I raised the courage to ring him back & long story short I'm going to see him tomorrow. It feels like a 20 year scab has been ripped off but I'm looking forward to it & hopefully will get to seen my mum again. Don't be a fool like me & wait this late long.. give your parents a hug from me.

Good luck. There's a thread of conversation in the other chat about how it's never too late so that. But I imagine also the things that stopped you dealing with your parents 20 years ago might have changed a bit now. You're an adult that gets to be you and not implicitly subservient, they maybe need you, it could be really good. I'm happy for you to try at least. I did not gently caress up the gammon, it was absolutely acceptable.

Fudge is ordered, can't wait to eat too much fudge and then feel sad that I have to wait for fudge for another few weeks. To celebrate the buying of fudge I picked up my Bloodborne run again and beat the Blood-Starved Beast without taking a hit. I don't understand why people think he's hard, you just roll past him when he very obviously lunges at you and he never hits you. Looks cool though.
