So if my wife and I both wanted to share a copy of this game but play it simultaneously on each of our PCs, which is the best purchase option? I mean, I know we can do Steam family share, though that requires the "host" computer to go into Steam Offline mode to play while the guest is also playing it. Is this our best option?

GOG is definitely better for that use case. You can even download offline installers through GOG, and there's no restrictions like needing guest or host computers.

Full disclosure: I never played the Witcher 3. I have however played Witcher 2, or at least the few hours of it before I had to turn it off because I hated it. Ironically the thing that I hated about it the most was the fact that Witcher 2's narrative seemed to be trying way too hard to appeal to 21st century edgelords and the narrative being "dark" simply meant that everyone said swears all the time and there was odd heavy metal music playing constantly. Funnily enough, this is actually one of the reasons I'm looking forward to Cyberpunk 2077; because all those things I hated about Witcher 2 for being, in my opinion, a poor fit for a fantasy setting are in fact assets in a Cyberpunk setting Anyway this is my post about the video games from poland

OK so your first problem is that the game PDFs are mostly larger than 50Mb which was the limit that the error in the "Send to Kindle" app threw at me. You could get around this by breaking the PDFs into parts I suppose. I uploaded a copy of the pre-gen characters for the RED jumpstart kit. Here's what it looks like on an Oasis.   The text is pretty small and this is the larger of the Kindle screens. The paperwhite is 6" this is 7". There's no ability to zoom in as far as I can tell. It just displays the PDF as laid out. So it all depends on how much you like reading small type.

If you are on an iPad you can view the pdf in safari and then send it to iBooks or the kindle app. It’s then uploaded to the cloud.

PDF's look pretty bad on a Kindle, imo. But if you want to convert PDF's to Kindle format (or any other format), and Amazon isn't playing ball, you can just use https://cloudconvert.com/. I use it all the time. It's great. Edit: It won't convert anything if the file has DRM on it though
