I’m on mobile so I don’t have links but I think both are available online. Spicy mushroom lasagne from Flavor (Ottolenghi/Ixta Belfrage) and shaved asparagus salad from Vegetable Kingdom (Bryant Terry). Both great cookbooks btw.

I just made a prawn and chorizo paella and, against pretty much any recipe I could find used fish stock instead of chicken or vegetable. Now I’m mad that these recipes are incorrectly telling people to use chicken stock cos oh my god it was amazing and the fish stock really added a lot of flavour and depth

A surprising amount of the recipes also added the chorizo quite late and to my mind that should be going in first to impart its juices at the earliest possible opportunity

I think most recipes just don't assume you'd have fish stock. I wish more recipes gave you "want to make it really special? Do this upgrade!" options.

First post in a while, recently I've not done well plating but today I said gently caress it :justpost:
Black rice bowl! Later topped with a fried egg, fermented black bean mayo, and togarashi, but I botched the plating / need wider bowls to have that presentation make sense.

Carbonara for dinner! Inspired by General Chat, second time at carbonara. Got great guanciale at a butcher nearby I didn't even realize made it. Got a lil carried away with the black pepper but hey, I love it. I felt like the first recipe I followed included sort of tempering the egg/cheese mixture with a small amount of slowly introduced pasta water, so I kinda just winged it and then added that to the pasta/pork fat biz and added additional water while stirring. No goopy scrambled eggs so I was happy.

Grilled up portobello burgers and corn tonight. After I started doing corn right on the grill, I can’t go back to making it any other way. It’s just too drat good with a little char on it.
