surely authentic means something along the lines of "as if it were made in the dishes origin", and in a lot of cases if it was strictly adhered would probably also mean, limited to only their limited local ingredients, and without the benefit of modern cooking technology and knowledge. which also makes you wonder if a modern version of a traditional dish from the dishes origin, and all they've changed is used newer probably better ingredients and cooking techniques.. is that authentic? suppose now you've got multiple streams of authenticity this is a picture of an authentic american meal

anyway here's the "authentic" cat face joe chicken season a four pound chicken with kosher salt and let it sit for a bit and mix two tablespoons of kosher salt with two cups of buttermilk til it dissolves. put it and the chicken in a ziploc bag and put it in the fridge for a day flipping it a couple times. take it out and let it sit for an hour before removing it from the bag and wiping all the buttermilk off. tie the legs together and put it in a roasting pan on top of a bunch of red skin potatoes cut in half and about a half inch of salted water or stock or whatever. push it all the way to the back of a 425° oven for 20 minutes. turn it down to 400 and move it to the center but turn the whole thing 180°. cook it til its about 165 internally and then let it sit for 15 minutes covered in a sheet of foil

its more authentic to take it out once it hits 115 and let t rest from there

the best way to cook a chicken is to cut out the backbone and roast it flat on a bed of potatos & onions until the skin is really crispy

ive never tried to spatchcock a turkey but it seems like cutting out the spine would be fucken tough compared to little chickens, do kitchen shears still work on the rib bones of turkeys?

theoretically spatchcocking deals with an entire bird and butterflying has dealt with specific parts (e.g., a butterflied chicken breast) but they’re often used synonymously

you don't have to remove a bird's spine but it can be easier than cleaving through it vertically regardless of the method's name, it's pro af for chicken
